Directions
- A large saucepan is sprayed with a nonstick cooking material. Onion is added and cooked with constant stirring for about 5 minutes until brown.
- Pepper, tomatoes, oregano, garlic and salt are stirred in and cooked for a few minutes.
- The mixture is poured into a blender container which is later covered with a preferably tight lid and blended until smooth.
- The mixture is returned to the saucepan. It is boiled and then left to simmer for about 5 minutes over medium heat.
- Crisp tortillas are added to the saucepan and cooked for 2-3 more minutes.
- Cheese is sprinkled and the preparation is then covered and allowed to stand for a minute in order to melt the cheese.
- Top with cilantro, if you wish, and serve immediately.
