            4 servings (1 cup per serving)

            Ingredients

            nonstick cooking spray
            0.333 cupchopped onion
            3 cupchopped tomatoes
            2 jalapeno peppers, stemmed, seeded, and finely chopped
            2 clovesfinely chopped garlic
            0.5 tspdried oregano
            0.5 tspsalt
            8 6-inch corn tortillas, each cut into 6 wedges, crisped
            0.5 cupshredded reduced fat Cheddar and Monterey Jack (Mexican blend) or Cotija cheese
            chopped fresh cilantro

            Directions

            1. A large saucepan is sprayed with a nonstick cooking material. Onion is added and cooked with constant stirring for about 5 minutes until brown.
            2. Pepper, tomatoes, oregano, garlic and salt are stirred in and cooked for a few minutes.
            3. The mixture is poured into a blender container which is later covered with a preferably tight lid and blended until smooth.
            4. The mixture is returned to the saucepan. It is boiled and then left to simmer for about 5 minutes over medium heat.
            5. Crisp tortillas are added to the saucepan and cooked for 2-3 more minutes.
            6. Cheese is sprinkled and the preparation is then covered and allowed to stand for a minute in order to melt the cheese.
            7. Top with cilantro, if you wish, and serve immediately.
