            Original recipe yields:

            8 servings (8 pieces)


            6 ozsoft butter or margarine
            6 ozbrown sugar
            3 eggs
            6 ozself-rising flour
            2 tbspcocoa
            3 tbspmilk
            0.5 lemon

            1. Preheat your oven to 350 degrees Fahrenheit.
            2. Base line a 9in baking ring with greaseproof paper.
            3. Cream the butter and sugar until light and fluffy. Beat in the eggs. Gently fold in the flour.
            4. Remove one third of the batter to another bowl.
            5. Blend together the cocoa and milk and mix into the larger portion of batter.
            6. Finely grate the lemon rind and squeeze the juice. Add rind and 1 tbsp juice to the smaller portion of batter.
            7. Spoon the two batters alternatively into the baking ring and cut through once or twice with a knife to lightly marble the batter. Smooth the top.
            8. Bake 40-45 mins or until cake tests cooked. It may still look a little moist on top.
            9. Leave to stand 5 mins then unmould onto a wire rack to complete cooling.

            Recipe Notes

            Butter or margarine straight from the refrigerator may be softened on DEFROST in the microwave. Weigh cold fat, place in mixing bowl and soften-15 secs to 1 min depending on quantity.
