            Ingredients

            1 tbspoil
            1 clovegarlic, skinned and crushed
            1 largeonion, skinned and thinly sliced
            2 stalksof celery, finely chopped
            2 eggs
            4 tbsptomato puree
            1.5 lbextra lean ground beef
            4 ozfresh breadcrumbs
            seasoning mix to taste
            0.5 tspsalt
            0.25 tspground black pepper

            Directions

            1. Preheat your oven to 350 degrees Fahrenheit.
            2. Combine the oil, garlic, onions and celery in a bowl, cook 3-5 minutes to soften.
            3. In a large bowl beat together the eggs, tomato puree, crumbs and herbs. Work in thoroughly the meat and vegetables.
            4. Season.
            5. Spoon into a 6 x 10 inch baking dish pressing down lightly.
            6. Cook 20 mins. Leave to stand for 5 mins then place the meatloaf on a warm serving plate.

            Recipe Notes

            Serve with tomato or onion sauce.
